Form and material. The spherical shape ensures even heating of the casana. Cast iron as a metal has low thermal conductivity, i.e. it takes a long time to heat up and a long time to cool down. The heating is even, so that the food is cooked or cooked evenly on all sides, but it is virtually impossible to burn the food in certain areas. This feature will prevent the food from cooling too quickly, so it will taste, smell and colour great when served.

Polishing. The inside of the cauldron is polished, the inner surface smooth. The exterior of the cauldron is rough due to a dense layer of soot formed by the solidification of the cooking oil and prolonged exposure to the gas burner. Soot doesn’t stain, you don’t get dirty, it’s called anti-corrosion metal treatment.

Walls. The 10 mm thick walls ensure long-lasting braising, retaining heat for several hours after cooking.

Bottom. The cast-iron Kazan is designed for use over an open fire and has a round bottom.

Handles. Four strong handles make it easy to move the cauldron.
