Sadzh: how to choose the material and setup (with legs or without)

A Sadzh is a flat pan with a large cooking surface. It’s commonly used for flatbreads, lavash, vegetables, fish, and quick frying on a wide surface. In this category you’ll find cast iron and stainless steel Sadzh pans, plus options with removable screw-on legs or without legs. We also offer a table stand for Sadzh for serving and keeping food warm.
1) Material: cast iron or stainless steel
- Cast iron Sadzh – excellent heat retention and even frying, great for a strong “crust”. Needs basic care.
- Stainless steel Sadzh – lighter and very practical for frequent use; easier to maintain.
2) With legs or without legs
- With removable (screw-on) legs – convenient for cooking over coals/fire: the Sadzh stands on its own.
- Without legs – a versatile option: can be used for cooking (with proper support) and for serving on the table.
3) Table stand: how it works and why it’s useful
- For serving: place the stand on the table, put the Sadzh on top – neat and safer presentation.
- To keep food warm: you can place a bowl with hot coals under the Sadzh to maintain heat longer.
- Great for groups: food stays warm on the table, so everyone can eat comfortably.
4) Quick choice
- Maximum heat reserve and even frying: cast iron Sadzh.
- Lighter weight and easy care: stainless steel Sadzh.
- Cooking over coals: Sadzh with removable legs.
- Serving + keeping warm on the table: Sadzh + table stand + bowl with coals.
Quick tip: tell us whether you’ll use the Sadzh mostly for outdoor cooking or table serving, and for how many people – we’ll recommend the best material and setup.

Saj is perfect for cooking meat, vegetables, fish or oriental dishes. The concave shape allows the food to heat evenly and prevents excess liquid from evaporating, preserving the juiciness of the food. When the food is ready, place the saj on stand with a charcoal or candle bowl at the bottom. This keeps the food hot, creating an elegant presentation suitable for shashlik, fish, kebab or vegetable side dish.
