An Afghan kazan is a pressure pot. The key rule is do not fill above 2/3, so the valves work properly and do not get clogged. This is why the “nominal capacity” and the “usable capacity” are different.

1) Usable capacity (the 2/3 rule)

• The usable capacity is about 2/3 of the stated volume.
• Example: in a 10 L pot you typically cook around 6-7 L of food.
• Important: do not fill above 2/3, otherwise the valves can get clogged.

2) Choosing capacity (by number of people)

• 5 L: usually for 2-3 people.
• 8-12 L: a universal option for a family, about 4-10 people.
• 15-20 L: for bigger groups and outdoor cooking.

3) Type (appearance and practical notes)

• Black: classic option, great for open fire. Often taller and narrower, easier to clean and maintain.
• Two-tone: brown coating on top with a polished bottom. Often lower and wider, looks more presentable but needs more careful care.
• The differences are mostly external, choose the type you like visually and find more convenient.

4) Consumables and maintenance

• The main consumable parts are the gasket and the valves.
• Check regularly that the valves are clean and move freely.

5) Heat sources

• Works on most heat sources except induction.
• For induction, use an adapter plate.
